Chef Kazakov's cooking “handwriting” is simplicity, elegance and pure product flavor, and the foundation of the cuisine is personal ties with suppliers. Now Anatoly works with farmers all over Russia, they grow fruits, vegetables, meat, poultry, as well as rare mushrooms and seaweed for him.
“Twice a year I bring my producers to the restaurant, prepare dinner, and we discuss what interesting products they can grow for us. We make a seasonal grocery calendar and decide how much of it we need.”
